From the owner, Russell Quinn:
Tell me about the inspiration behind the design of the Sweetwater Rooftop Bar.
The inspiration started when we commenced with the development application back in 2011. We found that exactly where building B was proposed with the Richmond Quarter was the site of the old Richmond Theatre & gardens that closed in the 1950’s. –It was a meeting place for locals & we wanted to bring that back with a contemporary twist.
Can you describe to me the fitout?
The brief was to create a space that feels stylish & edgy – but not posh. We understood that Fremantle is an eclectic mix and wanted to keep that sense of style but a little more upmarket than usual. – The brief was Interpreted as “ Avant Garde Bohemian”.
How was being part of the Richmond Quarter influenced what you have done at Sweetwater?
Firstly acoustics was one of the main influencers when designing the building as we were aware of the close proximity. We implemented many measures to limit this ( specialist acoustic engineering to floor – ceilings & acoustic screen wrapping the entire terrace (approximately 50 meters long)
Secondly I could see from the sales of apartments that there was a large age gap (from mid 20’s – through to retirement age) ….it became obvious at that point that we needed to appeal to all ! — At Sweetwater we are really pleased that our demographic is as varied as the apartment sales & we have the same groups of people visiting & enjoying the venue together.
We knew that we needed to impress the older demographic with the food offering and a separated dining space hence the decision to get Leigh Power from Melbourne (Chef) on board and where the metal brass curtain originated. –In order to appeal to the younger guests we knew that the drinks were going to be important – again we aimed at the sky & got Ben Tua and a specialist cocktail crew behind the bar.
